COA officially opens on March 6, 2026, bringing a Tulum-inspired rooftop experience to the heart of The Gulch. Located atop the new Canopy by Hilton, COA centers around agave-forward cocktails, vibrant flavors, and elevated hospitality in a setting designed for both locals and travelers. Reservations are now available for March and future dates.
